Ingredients:
cauliflower 1/2 cup(chopped)
Carrot 1/2 medium(grated)
Beans 1/4 cup(chopped)
Cabbage 1/4 small(shredded)
mushrooms 2 medium(chopped)its an optional
Green capsicum 1/2 medium(chopped)
Oil 2 tablespoons
Onion 1 small(chopped)
Garlic 2-3 cloves(chopped)
Ginger 1 inch piece(grated)
Dark soy sauce 2 tablespoons
Green chilli sauce 2 tablespoons
Vegetable stock 4-5 cups
Salt to taste
Sugar 1/2 teaspoon
Black pepper powder 1/2 teaspoon
Cornflour 3 teaspoons
Vinegar 2 tablespoons
Spring onion greens 1 cup( chopped)
Method:
1.Heat oil in a deep pan on a high flame till it smokes.
2. Add onion, garlic, and ginger and saute for a minute.
3. Add carrot, cabbage,cauliflower,beans and mix. Add mushrooms and continue to saute.
4. Add green capsicum, salt, sugar and mix.Add dark soy sauce, green chilli sauce and vegetable stock and mix.
5. Add black pepper powder and mix. well and cook on a high flame for 2 minutes.
6.Add cornflour mixed in a little water and cook till the soup thickness(as u like). mix well and cook on a high flame for a minute, while stirring continuously.
7.Add vinegar and stir. put off flame
Pour into soup bowls. Garnish with Chopped spring onion greens
