Ingredients:
Sweet Corn - 1
Carrot - 1 (finely chopped)
Beans - 3 (chopped finely)
Water - 2 cups
Black Pepper Powder - 1/8 tsp(for taste)
Cornflour - 2 tsp
Onion - 1 tbsp( finely chopped )its an optinal
Spring Onion - 2 tbsp
Sugar - 1/2 tsp
Oregano -1/4 tsp(vaamu)
Salt - to taste
oil or butter -1tbsp(as u like)
Method:
1.Clean the leaves and silk strands from the corn. first boil or steam the corn . this can be done in a pan, steamer or pressure cooker. after drain and let the corn be cool.
2.Using a sharp knife, separate the corn kennels.Blend the corn kernels with some water in a blender till smooth.Reserve 2 –3 tbsp of corn for garnish
3.Heat oil or butter in a pan. Add all your vegetables ready by chopping it finely. First saute carrot,beans and onion till raw smell leaves. Boil water in a container when it starts boiling add all the vegetables (except spring onion).
4. Allow the vegetables to get cooked.Add the corn paste and stir( mix it thoroughly).
5.Pour water or veg stock and stir again. Once the water is reduced a little and veggies have turned soft, add the salt,pepper powder,sugar and remaining corn kernels.Let it simmer for 3mins.
6.add corn flour dissolved in 2 tbsp of water . this is done to thicken the soup. simmer for a couple of minutes till the soup thickness and corn flour gets cooked.
7. Then add oregano (vaamu)mix well.Finally garnish with spring onions and switch off. while serving garnish with more spring onions and black pepper powder and then serve
