    Hyderabadi Mutton Biryani


    Mutton Biryani

    Ingredient:

    Turmeric Powder -  1 Pinch
    Saffron     - 1 Pinch
    Coriander Leaves - 1 Bunch
    Salt      - To Taste
    Red Chilli Powder - 1 tbls
    Oil     - 5 tbls
    Boiled Egg For Decoration - 2 (optional)
    Rose Water - 1     tbls (optional)
    Garlic And Ginger Paste - 2 tbls    
    Golden Fried Sliced Onions - 2 Cup
    Mint - 1 Bunch
    Gr Chillies- 3 nos
    Curd     - 2 Cups
    Cashew Nuts -     50 grms (optional)
    Mutton     - 1000 grms
    Basmati Rice - 500 grms
    Black Cumin - 1 tsp   
    Garam Masala - 2 tbls    
    Garam Masala Powder - 2 tbls
    Lime Juice - 2 nos
    Meat Tenderizer - 1 tsp(optional)

    [For Meat Tenderizer
    Ingredient :


    Raw Pineapple -    1 nos
    Raw Papaya    -    1 nos

    Directions:


    1.cut the  pineapple and papaya   grind them that it meat tenderizer ready
    2.Meat is often tenderized before cooking, to make it less tough and more suitable for consumption.]
       
    Directions:


       1.First boil the water, add oil, salt and half cook the rice.
       2.Next marination of mutton, in a pan take mutton, add all the spices,          curd and onions.
       3.Now in a pan add the marinated mutton in the bottom and top it of with         half cooked rice, add mint leaves, coriander leaves and fried onions.
       4.Repeat the same process twice. Cook for 30 min. Serve hot with raita


    tips:

    1.papaya and pineapple is the best meat tenderizer,The papaya  and pineapple does not change the meat flavor.

    2.Meat tenderizers are proteolytic Enzymes or proteases, enzymes specialized in breaking thepeptide bonds between amino acids found in complex proteins.
